Goddess Summer Sandwiches

 

This vegetarian sandwich is packed with tons of veggies and fresh flavour. This is the perfect lunch for a warm summer afternoon.

Ingredients:

  • 1/4 Cucumber, Sliced
  • 1 Large Tomato, Sliced
  • 1 Avocado, Sliced
  • 4-5 Slices of Gouda Cheese
  • 1 Can of Chickpeas
  • 3 Tablespoons of Lemon Dill Hummus
  • 8 Slices of Multi-grain Bread
  • 2 Handfuls of Deli Blend Sprouts
  • Wax Paper
  • Butcher's Twine

Directions:

Step 1:

Drain and rise your chickpeas. Add hummus and stir together. The hummus helps the chickpeas stay together in the sandwich and adds flavour.

Step 2:

Slice your bread and assemble your sandwiches. 

Step 3:

Wrap your sandwiches with wax paper and secure with twine. This helps the sandwiches stay together making them easier to transport if you plan on having them in a picnic setting.
